wen i was about 17 i made a plant senser thing. That measured light intensity, moisture level, and temperature!
All showed on a display of LED lights... i never used it but it was fun to make

Sounds a bit daft, but the reason I'm suggesting it is that the electronics are an absolute doddle to do (ahem, RS catalogue anyone?). The hard bit is making the whole thing comply with health and safety regulations since you can't just go drilling holes in fridges willy-nilly!
This, if you get it right, gives you a very good grade
