On the iPhone there is an app called dock which puts a little sunburst in the bottom right hand corner. You press it drag it to the middle of the screen and it brings up all of your apps so you can quickly switch to something different. Within that there is a screenshot option.

That is almost correct, but since dock doesnt work all that well in the 1.1.1 software version of the iphone and ipod touch, then it really isnt an option....
With "snap" you can also take screenshots from your pc, monitor iphone and ipod remotely. I did it while my friends were playing with it, and when i showed them their progress, they where totally blown away .

How do you install widgets? Is it just a case of getting OpenSSH through installer and accessing the applications folder through an ftp client and dragging and dropping them in there?

Yeah, that is basically it. Just place them in the right folder.
/var/root/Library/Widgets

That is where they go.
