I know odd hey! It only comes up with the image part of the signature if I edit my post..

the reason for that is that once the post is submitted the first time, the signature is captured and forms part of the text of the post.
therefore when you edit and submit the post again, the script no longer treats it as a signature and hey presto, you get your image. Unfortunately you also get the "this post was last edit by...." message too.

My interpretation is that you'll never be allowed to use them in your signatures for convenience here I'm afraid.
