I am very eager to learn about de-branding this lovely phone....
It arrives tomorrow and from experience I know Vodafone totally ruin any handset with their firmware so I want to get rid of it ASAP!!

Surely it would be just as simple as it is to de-brand the N97? both use the same platform so should have the same ways to de-brand?
Or is it not quite that simple?
I know the FIRMWARE specifics are different but the principle should be identical!

no, unlocking merely allows your phone to use sim cards from other networks.
debranding changes the actual operating system from a network customised one to a generic one which does not have network specific features/options etc
these are two separate things

right so does debranding also unlock the phone, in other words I don't have to debrand and unlock, my phone will be vodafone UK which from what I have read is not sim locked anyway but I want to at least debrand it as though I bought it from CFW

Debranding means removing customizations from certain operators. Unlocking means that you will be able to put the sim card you desire to your phone. These are two different things.
