This is probably a stupid suggestion.............. BUT

Why not just get ANYTHING cheap with a 2.5mm stereo plug, cut if off, take your headphones, cut the 3.5mm plug off.

Some carefull, wire stripping and some light soldering to the wires, slip over some black heat shrink tubing to cover the join and there you go. your headphones with a 2.5mm jack.

'Ok' suggestion, but keep this in mind. COST!!! I converted about 4 devices for less then $5USD. What would you thing the cost of 5 components already equipped with 2.5mm jacks would cost? By the time you get to 1 I'm sure you would have already exceeded this cost. Moreover, the method you suggested is not as simple as you think for the fact that different components usually have different wiring schemes. For example, Sony headphones have more wires and threads in addition to the lacquer type coating then any other headphones I've seen. With that said, one would not be able to simply match up wires and connect them. It doesn't work that way. So again, it's an ok suggestion, but not practical in more then one ways.
