here's how to change the animations:

michal jerz from my-symbian recommends you try the animations as shutdown first. if this plays well, then change to startup.
because if the video screws up your p900, you won't be able to start it EVER AGAIN. i think that's what he meant.
anyways, take your startup ani, set as shutdown, see if it works, then set that same animation to startup and add the new shutdown.
simple.
now ... how to get rid of the video that bothers you:

a) Go to my-symbian.com and go to the p800 downloads section. You will see a download for the file manager. Download this and install it to your p800.
b) Go to drive c and copy the two *.mp4 files out of the sysdata directory either copying them to somewhere else on your p800 or on to your pc.
You will now have the default sony ericsson logo.

indeed he says Finally this guide is for the p800 NOT p900. There was talks and still is about how to do this on the p900, the answer is you can't do it.
