If you want to take a look out at the general layout of the OS, you can actually download an emulator from Symbian and play with a virtual phone. It's not quite like the P800 will be (the emulator is V6.1 of Quartz rather than V7.0) but it's almost identical in appearance. It mostly shows the PDA side of the OS, as many phone functions are phone specific. The download is over 100MB though, so you might want a broadband connection!
You need to register at:
http://www.symbian.com/technology/UI/uiq.html
to download it (Quartz SDK for Symbian OS V6.1)
