With spot photometry only the light in the center of the picture is measured to calculate the exposure (otherwise the whole picture is used). Its useful if the contrast between the object to shoot and the background is to high (in such cases the object may become to light or to dark).

IMHO with a digital camera (as K750 is) it's quite easy to see in real time the exposure of the pic (directy on the screen).
I'd believe that the lack a spot metering/photometry is not an issue if you can compensate the exposure and.. WYSIWYG O:)
