I'm surprised almost no-one else has mentioned Doom! Excellent graphics for it's day - I lost count of the number of times I went round a corner and jumped violently when I came face to face with a demon! The network games we brilliant as well - if your PC was fast enough!

Perfect Dark for the N64 - Basically a Goldeneye clone but awesome multiplayer
X-Wing - Destroy the deathstar yourself!
Tie Fighter - Destroy rebel scum!
