Wireless G is fine for music and medium quality video (even full DVD quality if you get a good, consistent signal) but it's absolutely useless for HD video or if more than 2 or three users are using it heavily at the same time.
Obviously it's the wireless kit that struggles the most so you need very good quality stuff. My mate (who's installed a few media centres in his time) reckons that the Netgear wireless - N stuff works really well and can cope with HD video.

Wouldnt a NAS do what you want, rather than a server?
Something like this:
Lacie 3TB NAS
Cheaper than a server.
