does anyone know: is the usb cable supposed to charge the battery EVERY time i connect it?
if so, is there a way i can disable it?
each time i want to download / upload something to / from the phone, it begins charging, so i'm worried for the battery

It wont hurt the battery AFAIK. The battery the K750i uses knows when it is full and wont take any more charge. It just sends the charge back out of the phone without overcharging the battery.
The other good thing about the K750i's battery is that you can charge it at any time, not just when the phone is empty. In fact, charging the phone each day is better for the battery than to keep charging the phone from flat.
However, its always best to stay on the side of caution. Only charge the battery until its full. Even though the battery wont be damaged it might heat up the charger and maybe reduce its lifespan.

You are absolut correct. Small rapid charges is far better for a Lithium-battery than a complete drain. Actually will a complete drain destroy the battery but that's not possible because both phone and battery have a protection-circuit the insures that it won't happen. But if you leave you battery without charging it for a long period of time make sure that's fully charged.
Don't worry about your charger. It's lifespan is much longer than most other electronics and sligth reduction in its lifespan is not ever going to be an issue
