Yeah that's how I did it, but when the phone switches off the program asks me to, reconnect it manually. This wasn't the case with the S I updated today. It looks like the pc can't detect the phone when it's turned off...

Have you tried restarting your phone and pc?

Yeah, tried restarting the phone several times to no avail. I haven't restarted the PC, but I doubt that would solve it, since everything went okay with the XS...

It is a driver issue. Try downloading this:
Download
this from my personal Google Drive
Close PCC (including from the system tray)
Run the download
Turn off your phone, hold volume down and connect to the PC
Keep hold, Windows should pick it up and install drivers
When the drivers are finished installing disconnect
Start PCC and try the update process again following on-screen instructions
Come back here and tell us if it worked so I can take the download out of my Google Drive

Shall I select one of the drivers to install as well? Because just running the app and connecting the phone yields no response on either side.

Yes, sorry, you should install the flashmode drivers and the TX drivers (which are the same drivers as for the T). Both are near the bottom of the list.

Right, I tried that but it didn't work. Windows/PCC/SUS still can't detect the phone when off.
Could it be because I had the phone connected to the PC while the flash tool drivers were installing?

No, that shouldn't be an issue.
Does Windows try to install any sort of drivers when you connect it turned off with the volume down button held (or does it not even flinch)?
When you connect with the volume down button held does the LED on the phone light up? What colour?

When it's turned off and I connect it to the PC, Windows doesn't respond at all. It doesn't try to install drivers or anything.
There isn't any light either on the phone...
