I'm pretty sure that you can just move foleders and files from desktop to the next...
Parallels is very useful and will run most apps quite happily, but it doesn't have a very powerful 3D engine or something so games are outta the question, so if you wanna play games, keep Bootcamp, for anything else Parallels.
There also another technology called WINE, which allows Windows apps to be run in OSX natively without using RAM destroying multiple desktops, think of it as Rosetta for Windows.

yeh ive got crossover, but had some problems installing stuff.... although it does support some of the more popular windows apps like office etc
