I think the 1000 messages thing has been around since the k790i/k800i...
I know that the W710i has it for a fact...

Correct. My K800i can store 1000, but my W810i can only store ~100.
I would've thought the W850 could hold 1000 as well, seeing as it's newer than the K800i/K790i?

Because SE is stubborn like that. SMS management and security- these are the two things that piss me off when it comes to SE phones.
There are multiple threads on SE's own feedback forum full of people asking for security and sms management and SE chooses to ignore them....
