Why does it take the iphone for networks to change their systems? I cant see that the cost of upgrading to edge can be offset by the revenue created by the iphone.

probably so that the users of the iphone can have faster browsing and download speeds than with gprs alone since they cant have 3g.

If your phone picks up a 3g signal then you will not pick up edge as well.
3g works on 2100mhz which doesn support edge, so when you phone is locked onto 3g it will state 3g.
However if you either switched of 3g in the menu, or went out of 3g coverage, then your phone will lock onto a 2g mast, and if you are in a area where the mast has been upgraded then you will have a little E on the phone.

m phone doesn't display E but it has it btw so I have no idea which it's using all I know is it has 3G on it always

Some operators display the "E" as part of area information. Try to disable "Cell Information" and see if the "E" goes away.
