If you get/have gprs, you can usually get away with keeping your existing gprs data account or copying it & adding new e-mail accounts to connect via that profile - I added a new pop3 account yesterday by going to message >> e-mail >> options >> edit account & add new.

then edited the account:

connect using - bluyonder grps data account >>
protocol - pop3 >>
inc server - pop3.blueyonder.co.uk >>
port - 110 >>
mailbox - my mail user name >>
password - my mail password >>
outgoing server - smtp.blueyonder.co.uk >>
port - 25 >>
address - me/you/us/them@blueyonder.co.uk >>
download - headres only or both >>
from name - thats easy >>
no signature >>
copy outgoing - nope >>
check interval - I have this switch off - or T68 will dial/connect every now & then & my network charge me for the pleasure.

The good thing about pop3 is that most of the above stays the same - such - the ports are (usually) the same, as are the incoming & outgoing servers - they are always pop3.serviceprovider.com & smtp.serviceprovider.com

Just to comment on what you have said...

GPRS is fine as long as it is a data APN because most wap APNs wont allow you to connect to mail servers.

If you are using a non ISP email account then the incoming and outgoing mail servers are the same as you would use in outlook e.t.c.
If however you are using an ISP email account it is very unlikely that you will be able to access the smtp server. Instead you need to use the smtp mail server of your service provider.

I would like to add that one of the best online email services that I have seen yet has to be www.softhome.net

There you can setup a web based email account, then enter the details of the servers and ports it gives after registration into your phone. Connect using whoever or whatever you want WAP or GPRS and hey presto you have email that allows you to send and recieve email including attachments.

Protocol - POP3
Inc. Server - mail.softhome.net
incoming port - 110
mailbox - Softhome username (Everything you specified before the @)
Password - Self Explanitory
outgoing server - mail.softhome.net
outgoing port - 25 or 2500 or 25000
email address - username@softhome.net
download - Headers and Text
