I'd have to say ELITE, and it's predecessors like Frontier and First Encounters. I can’t wait for the new one.

That game has an incredible game engine, best I've seen since the old flight simulator.

As for these new age games, they don’t even come close to the code these guys had.

I agree with a lot of the posts so far, I think a lot of the Megadrive games were classics, I would add NHL (96?) to the list, i loved the simplicity and the fights, oh the fights.....
