Yes I could make different night modes controlled by joystick but I never liked it because you lose the EV feature. The only good way for me is to control it with the zoom keys. Anyway like said in first post if you decrease EV the exposure will be decreased too.

That's is tru, but sometimes or scenes EV is unusable, one example is a night mode where + EV increase noise (green and red pixels), right?

the stick doesn't have enough range for most things, shutter speed, focus control etc.
exposure time (EV) is iso & shutter speed, so fix the iso then when you change the EV with the joystick your only changing the shutter speed then you have some form of manual shutter speed.
