I mostly use:
LauncherPro Plus - Great launcher with nice widgets, which you only get with the plus version.
Dolphin HD - An ok browser with which you can easily switch user agent to Desktop etc to browse the web in a normal way.
Mileage - To check my fuel consumption on my car.
Bankdroid - Check my bank accounts with a widget that shows how much money I got left.
Latitude - Keep track on some of my friends and family via builtin a-GPS.
AppBrain - Market replacement for knowing when to update, great widget.
Evernote - I always loose my memos when I reinstall or mess everything up, with this everything is backed up online.
Barcode Scanner - Name says it all really.
Dropbox - Save some of my important files online using computer and phone.
Go SMS - It's a good SMS replacement app.
Go!Chat Pro - An ok facebook chat.
LCD Density Changer - Change the density of the screen - Root users only.
Quick Settings - Change settings fast like Ringer, Volume contro, start/stop blutooth, start/stop wifi, start/stop gps reciever, start/stop mobile data, increase/decrease brightness of the screen.
Screen filter - When the darkest setting on brightness isn't enough, this will make the screen even darker. May need root.
SMS Backup & Restore - Quite good for backing up your sms and it's free.
Tapatalk Pro - Great forum reader.
SwiftKey - Awesome predictive keyboard thingymagog.
Voodoo Control App - For those of you who run Speedmod or Voodoo kernel, this will improve the sound output.
Spotify - Listening to music online, need to pay a monthly supscription to use it in the phone and you need flatrate on your data subsciption to use it, because I use about 1 GB of data every week unless you use the wifi. Can sync 3333 (number is not made up) songs to the phone.

My new favorite app is Swype, which is again available as a free beta download. It works surprisingly well, and really does increase my input speed.

Two other new apps I am finding really useful are Chrome Marks -- which synchronizes all my Chrome browser bookmarks with my phone -- and Link Push, which allows me to send a page directly from my browser to my phone.

And, while it's not specifically an Android app, I've been using Tripit -- which uploads my travel data to my Google Calendar and, of course, my phone calendar automatically.

For access to Marketplace in other regions/countries: Market Enabler

Works really well, specially for updates.

One caveat: Paid apps only work with credit card issued from approved country... so for those in the Philippines, and other 'free market' only... we're still out of luck on the paid apps.
