@Falcon That would most probably work.Change region (one thats available) and use SEUS.Maybe my problem is my starting point SE 2.1 ROM - Sony Ericsson X10i_2.1.A.435_GLOBAL-GGL GENERIC 1232-9897
That region hasnt been released yet so I cant update through SEUS.Havent had much time to do any downloading at work because its been so busy and I dont want to use up all my data bundle so Ive been impatient and just downloaded the SE 2.3 ROM available on XDA and flashed it on top of the Global -GGL GENERIC.Tried it with both Vodacom and MTN SIMs and same result.Even tried Wolfbreaks SE 2.3 Pre-rooted+xRecovery and its also happens.Many random reboots.
@Jmash Did you do what Falcon said? Change region 2.1 ROM thats been released and update with SEUS?

@Hobbs and Falcon,I didnt use seus,I used the rom from XDA like Hobbs,Seus kept telling me I have the latest software and the wait was killing me man.

@Jmash The 2.3 ftf from the Flashtool 0.2.9.1 thread? If thats the case and yours works then its my starting point, the SE 2.1 Rom Global Generic GGL rom.What SE 2.1 rom are you on before you upgrade to Gingerbread?

Greetings from East London SA, y'all.
This pic was taken along Gonubie Beach today, just outside EL. The shark was stranded on the rocks and these two rather brave okes helped to drag it back into the shallows. The shark was pretty exhausted from all the struggling; perhaps just as well...check those teeth out! LOL. Lekker to see such care, commitment and bravery to save one of nature's prime predators.

Got my X10 back early yesterday morning, wasted no time, i charged it up, then followed a very basic guide to change my region code to Nordic Combined (B), then i fired up SEUS, voila New FW Udate available, 20mins later its done and my X10 is on 2.3.3.
So far havent had any major issues other than the odd stutter in the Music player when playing music, im very happy with it, my phone feels new again, glad they got rid of the bloated Mediascape and have trimmed down Timescape, i cannot belive how smooth and fast yet useless Timescape is now, they should just get rid of it, on the other hand the New Music player with widget and EQ is excellent and so is the deeper FB intergration with Facebook-Inside-XPERIA, SE did a great job and learned a valuable lesson, and it shows.

@Tsepz I can't get Gingerbread to work on my phone.I've run out of ideas.Just updated through PC Companion the VodacomZA region Gingerbread and it just randomly reboots after a while,sometimes in a loop when it searches for a signal when I switch the phone on.If I take the sim out,it works fine.Thought it was my sim so tried another Vodacon simcard,same thing.What do you think I should do? Is it worth taking it in and asking them to try and fix it.Its driving me nuts and I'm on the brink of chucking it against the wall and saying f**k phones.lol
