I know you have to click YES, but what I'm asking if it sends an alert when the data is attempting to come in...you know, like when a call comes in, your phone rings?

Nope, theres no alert when you try to send a message to a Nokia. It just comes on the screen, no vibrate, no sound.
The trick i use is, when im trying to send something to a Nokia, i search, start to pair with the phone by entering a code, and then quickly abort the pairing a few seconds after entering the code.
When you attempt to pair with a Nokia, it will make a noise. This will bring the owners attention to whats on the screen. If you then try to send them a message without pairing, they'll see the request and hopefully say yes.

You are actually wrong. I have bluejacked many nokia phones, and i got a nokia 7610 myself. And when someone sends me something through bluetooth there is a sound when the message or whatever it is, is received. Thats why i always listen for a nokia sound when i bluejack someone, in hope to see my victim.

Well the 7610 is the first Nokia phone that does alert the user with a sound (except for the 6310).
I know the 3650, 6600, N-gage certainly dont - ive tried them out myself !

@ etaab
