EV -2.0 will be useful on shooting high intensity objects say lights,
and it also helpful in shooting some twilights shots and in some night modes..
+2.0 will be used rarely as it boosts the ISO so obviously high noise....

u cannot do much with ur camera setting apart from changing EV with default driver.in some cases u get ISO(k850i)
but in general there are 3 terms
ISO,Aperture,Shutter speed.
these three are the very important terms in photography.. combining all these EV has controlled Exposure..
but manual setting are the best to match ur needs.
there are some manual drivers availble u can try using it..
i have seen raider driver on the best in manual setting implementation for k790/800/810
for w995 u can get dirty's SCMX driver.. but unfortunately its left untuned.
