Umm... I guess your talking Mountain Bikes? I always go for more gears rather than less because you tend to get newer, better quality gear sets with a higher number of gears.
More importantly, go for the best, lightest, frame you can afford.
Lastly, I've been beaten to the end of 100kms by experienced, very fit men in thier 50's on 2nd hand no-name bikes. There is no substitute for FITNESS - time spent on the bike.

You'll need an Allen (HEX) key.
Google the words BIKE MAINTENANCE and you'll find plenty of sites with written instructions - I couldn't find any with illustrations so I haven't posted a link. Did you get a owners manual with the MTB? It may have that info.
