Battery Widget
Astro
WiFiBuddy
Wapedia
Touchdown (if you need push from an exchange mail server, otherwise Moxier works okay)

Google Earth is only available for Eclair devices and hence doesn't show in the Market. I don't know whether it can be manually installed or if it still wouldn't work.

Abduction - Free doodle-jump clone that I find to be better than the original
Barcode Scanner - I'm sure you can figure out what it does
Handcent SMS - SMS application similar to the iPhone in design that offers increased usability
Those three without a doubt. My fiancée laughs every time she hears the cow moo of Abduction starting... I'm addicted I tell ya!
Others on my list:
Advanced Task Manager - automatically kill apps that are running in the background
JuiceDefender - wonderful for prolonging battery life
Startup Auditor - kill apps you can't uninstall and don't use (Moxier, I'm looking at you) than keep em dead
Apps Organizer - an easy way to keep your app folders organized
PDANet - the best tethering app around
Seesmic - fully featured Twitter client
