I'd be happy with a decent SNES emulator, just so I can play Zelda 3 on the train. It would have to run in flip-closed though, playin with the stylus or jog would be insanity.

Not my favorite types of games, but light-gun games like Sega's House of the Dead would work very well with the touch screen.
Less easy to play with handwriting recognition would be the very surreal variant "Typing of the Dead" where you have to type the words in order to kill the zombies! (I kid you not see here:
