Not sure about how MMS is sent but I also have the T68i and I agree is does not ask for a service centre number but a service IP address for MMS.
Re 02 and email. I have been having the same problem with the GPRS and getting my email to work. I also have been given the same answer by 02. However somebody else said that by connecting by ordinary WAP and using IP addresses you can get mail to work on 02.

In the Uk T-mobile plan to release mms in the end of July, if they say there planning to it means probably the end of august, the same applys with vodafone and o2 probably wont till next year tha same as orange. Have orange even released gprs tarrifs yet or how about virgin
