You must be living very close together.
Well my home is a victorian period terraced house, so through the walls on either side we have neighbours, its not detached.

Why not ? they cannot prove it was you, since Bluetooth doesnt leave your phone number behind..

It doesnt matter what you do really, just do not make it obvious by laughing, or staring at the person you're bluejacking.
Also, try to do it in a crowded place. You're far less likely to be suspected or confronted by the victim. If you're stood in the middle of a field with your victim and there is nobody else around for miles, they're going to know its you.
Just use some common sense.
I bluejack people all the time, often when im stood right next to them and they can see me using my phone. The trick is, they dont know its me because i give them no reason to suspect me. Often, pretending to make a call on your phone is a good decoy, or randomly hitting the keys to make it look like you're texting is good, whilst the message is being sent.

Yeah, don't be a scaredy-cat! As well, most people have no clue what is going on, they usually think it's an sms without a return.number, or something from their network.

Yup. Heres a typical example.
The other day i was on a bus and saw a woman 2 seats in front pull out a Nokia 6310i. So, my first thought was to try to bluejack her.
I did, 4 times, and she was majorly puzzled, and was probably looking around thinking someone she knew must have been on the bus. She looked directly at me but it never entered her head it was me because she knew i didnt have her phone number.
I even took a picture with my K700i which made the
huge camera shutter sound and neither she, or the woman behind her and in front of me noticed.
Grow some nads, and try again..
