The pop3 client must allow you to delete an email on your phone but leave it on the pop3 server. This is critical.
Not so important is: have the LED do something different, maybe stop flashing when you have anything 'unread' or miss a call. Such as emails received, SMS's unread. Any obvious indication of 'unread' messages or missed calls would be appreciated.

Change the alert tone for priority1 messages. These are nearly always balance reports for PAYG customers and although vibrate is switched off for these messages it would be nice ot have a quieter tone or maybe the click tone. Take a leaf out of nokias book who use the descreet tone for all priority 1 messages - perfect.
when you press yes to send a text message the first thing you get is the list of phone book, groups, sim entries, unsaved numbers. Does anyone put the number in by hand when sending a text message? NO THEY DO NOT! This is the stupidest thing EVER.
Recuring calendar entries should be addressed. I cant understand why they haven't done this already.

How about the ability to select more than one SMS (for faster deleting and so on..)? Maybe the ability to sort SMS'es into folders like some Nokias..
