that's what I am telling you... you used 1.21. The decustomization file you used did put different CDA (CDA102286/16) number in your phone that gives you possibility to use SE US... In 1.30 the way to do customization changed, so when you use Unbrand/Repair tab you will get different CDA (CDA102286/0) in your phone which doesn't allow you to use SE US.
You just upgraded your phone with 1.30 right? You didn't loose any user data and your CDA number stayed the same... so you can still use SE US and we that used 1.30 for unbranding can not because of CDA...

When I flashed with just the K7S and K7D default language files, as per the latest instructions, O2 was gone along with all contacts, games, themes etc. as expected.
I wonder if I now went back and flashed the R2AA003 K7S, K7L and K7C files using the normal tab on total server I would then be able to use SE Online Update in future.

just upgrading will leave it the same!!! don't waste your credit...
Upgrading alone doesn't delete any user data...

PS you need to have at least 1 valid credit just to download a new firmware file, tried it this avo with valid username and password but with no credits left "you need credit for this operation".
Looks like no freebies then;-)

But still the firmware upgrade (as of 1.28) is free, but you need to have 1 credit to be able to download and use firwmare update... but it wont eat your credit if you do only *.K7S file with for example R3A when it comes out... Strange...

You cant use bluetooth because it basically updates the bloototh softwarre on it so it wouldnt be able to do it, something like that
What you need is the t28 unlocking cable, not the data cable as that wont work. Check the link above to my sale as you cant get them from shops it seems
