can anybody please post what every scene does? like which ones smooth out things and make pictures less detailed, which ones make colors brighter? And what are best settings for day light and low light pictures?

The camera automatically apply noise compression that smoothes images in low lighting but if you want it to be super smooth, use night landscape. This mode also maintains a lot of detail as compared to other phones with the same noise compression algorithm which is one of the coolest things about the camera

which ones make colors brighter?

Colour gets more saturation with with 1) cloudy WB 2) sports scene. But sports needs lots of light whereby cloudy is better in poorer lighting conditions

And what are best settings for day light and low light pictures?

For daylight I prefer auto scene, but use daylight or cloudy white balance instead. For indoor low light I use snow/beach scene (which hightens the temperature and lessens noise), for outdoor low light I use night landscape

mode, what if i use normal scene for everything, but change EV to -.7 or -1? Does it make my photos more detailed?

That works too in most good lighting cases, EV -0.7 (my personal choice) or -0.3 would increase the contrast in your photos and make them turn out better eventhough they'll come out slightly darker, but it does nothing to detail. N8 has good full auto images because I believe its 0.0 EV is equivalent to X10's -0.7

Normally i use the Beach & snow scene for daylight pics with Ev in -1.0 or -0.7. (i like the warmer look)
For macros too.
And sometimes i use the EV at -1.7 to boost up the contrast and color depth.
About N8,it don't have a good auto mode.
The picture are cold and lacks contrast. (you need,at least,adjust the white balance and the exposure)

Sure, no problem

@Luhccas-U1a
Yes, I prefer warmer colours for macro too, but I use Auto scene with Cloudy WB I guess I quoted N8 because one of the owners I know who takes fantastic shots using the phone told me that he needed to increase EV all the time which was quite surprising to me because I ont he other hand have to decrease constantly
