I agree, if apple designed a phone, then the outcome would be alot different.

Actually, if you chose to use iTunes to manage your iPod then you do need QuickTime - iTunes uses QuickTime to handle the audio side of things (importing AACs, converting MP3's and playing them back (QuickTime isn't just for videos)).
Try uninstalling QuickTime and see if iTunes still works!
You can, of course, manually manage your iPod using MP3's only (no DRM'd AAC) or use a third-party utility for copying tracks to it and remove iTunes & QuickTime if you want. It's your choice.
Presumably you also don't like Microsoft's marketing strategy of automatically wasting hard drive space with Internet Explorer and Windows Media Player on every PC, even though there are many (much better) alternatives?
You pays yer money and takes yer choice. You chose an iPod and Apple software!
