the flash freezes the water droplets and macro focus keeps them looking sharp, if youre doing this on a proper digital camera then you should shorten shutter speed to maybe 1/1250. Its possible to do this without the flash but you need lots of light.
This is one i took with my K800i


When i do this again with my C901 i will use a tripod, use auto timer to get 0 camera shake, have the area the water drops are falling to in focus before they arrive, and also a black background, maybe a black t-shirt

( this photo has come about a bit blurry because i was focusing in the wrong place and my hands were moving causing camera shake, and the light from flash has reflected off white background and back onto the water making it look grey )

any photo taking involves a little of creativity so that's a secret how i do it
but the whole secret is not a lot to learn: Flash+marco...and then play till you get the best results...or at least the ones that you like...mine photos with the curving water were achieved by moving the tap and not strong streem of water and that's it

I just picked up the C901 this past week and so far I am loving it. Awesome camera, really slick little phone. Went on a walk around the neighborhood today and snapped some photos near a new housing development. An overcast day, but the light was fairly decent.
