Whisky = Scotch and Canadian
Whiskey = US and Irish

I was under the impression that only scotch was 'whisky' and everything else was 'whiskey'. I know for a fact that Irish whiskey is definitely 'whiskey', the your guide at the Jameson distillery in Dublin drummed that into us.

I believe there is a similar rule regarding cognac, all cognacs are brandy, but not all brandy is cognac.
