I have taken flight into work to watch people play it for the first time and it has been very obvious that the game needs a tutorial covering the joystick and throttle controls.
If any of you have had (or are having) difficulty figuring out the controls then let me know.

There are instructions on my website but I don't really expect anyone to read them

I have added a couple of hints to guide people during the take off and I'm now looking at a tutorial to teach inflight controls.
I just need a couple of people to look at the new and improved demo containing the tutorial when it is done and tell me if it is what they need.

I like that thought. In my (brief) trial of the demo, I didn't really have trouble working out the controls, but I did find it a bit fiddly.
Perhaps if the jogdial could be utilised to control left/right (by scrolling), with an area up the left side of the screen that could control up/down (using your thumb), then we wouldn't necessarily have to use the stylus at all. Perhaps throttle could be jogdial forwards/back (I wouldn't use forward/back for anything that needs fine control).
Just a thought.

The optional arcade controls automatically correct any pitch and roll on the plane. It will prevent you going upside down and when you lift the stylus it will return the plane to level flight.
So if you pull the joystick to the left the plane goes left, right goes right, up goes up etc. If you release the stylus it flies level again. It becomes very very easy to fly but detracts somewhat from the sim aspect of the game in that mode.
I might even enforce a minumum throttle setting in this mode so that you cannot stall the plane during flight.
I'll release a version with all this in over the weekend (perhaps on my website only) and look forward to feedback on it... should be quite interesting.
