Right. Its not so much a trick, as something that you can say to start a conversation. It is an English Idiom "Break the ice" referring to the end of an uncomfortable silence.
And polar bears are heavy, and thus can possibly break through ice, just by falling. Hence the "joke":
Me: Do you know how much a polar bear weighs?
Girl: Ah... No?
Me: Me neither, but at least it broke the ice.
Notice that this small conversation is a gateway to larger conversations. Hence the "Ice breaking". And it is funny, because of the double meaning. The conversation broke the metaphorical ice, and a heavy polar bear may also have literally broken ice.
