You can't do it with an online server, no.
You need to find someone with either Fighter or Cruiser.
Branding does not affect it, it will be removed as part of the "upgrade" anyway.

Is there ANY way of using these SEMC, Davinci, SEtools, Fighter etc. if someone does NOT have an online paying mechanism. #2> Do any of these let one CHOOSE or customise the FW options or a spec'fic Firmware ?

You can not use Davinci or TMS without credits. Fighter/Cruiser is a stand alone tool, meaning it works without credits. But that's reflected in the price you'll pay for it, it's very expensive. It's not a tool designed for a hobbyist though.
Cruiser is the same software as Fighter, however it has support for unlocking/flashing K700i and later models. Fighter does not.
I don't understand your last question. With these tools you can flash any firmware language pack you want to a phone. This is good for debranding etc (and means you don't need SEUS anymore)
You can't flash a S700 firmware into a K700i though.
