Using davinciteam's service:

1. Is it possible to reflash to another country's firmware (to enable multi-character search in Contacts) and unlock/debrand my phone using the included USB cable in the W800 package?

2. If I unlock my phone, will it stay unbranded/unlocked even if I update my firmware in the future using the official SE Update Service?

3. If I reflash my phone's firmware from a China version to an European version, will updating the firmware in the future using the official SE Update Service keep it to the new country version I got from DaVinciTeam? Or will updating using SEUS revert it back to the China version?

1. Yes its possbile to flash to a different CDA, which enables different language packs. A list of the different CDAs can be found in this thread

2. Yes your phone will stay unbranded and unlocked

3. For future updates, SEUS will update with the latest firmware for you particular CDA, so if you changed it from a China to a Europe, it would stay as a europe CDA
