does it count the actual amount of sms sent?
eg:-
if i write a message spanning 3 sms, does it count the 3 or just 1 for the messages?

I got mine from O2 if that makes any difference?
When I go into my calls menu it just lists all the calls I've made, received or missed?

Menu > Settings > Calls > Time & cost > Message counter
If it's not there, then the firmware branding might have removed it.

I often send like 10 MMS at the same time "my operator has freedays" and they only count as 1 MMS, i guess it is the same with sms
edit: ohh you meant "LONG SMS" hmms do no i guess it counts as one
