I've tried the Sony Ericsson Update Service with the syncstation, but when I get to the step of taking off the simcard and turn the phone off, I always get the "no terminal connected". Any help?

Depends on the model. Any phone compatible with the DSS-25 (K700i etc.) will require the DSS-25 rather than any other cable in order to upgrade the firmware. (With the exception of the DIY cable you can make, see
http://www.davinciteam.com for details).
More recent models can be updated using the included cable.
If you want decent information, you'll need to mention what model phone and what model sync-station. Only the DSS-25 syncstation(K700i and older) or the DCU-60 data-cable (K750i and newer) will work for firmware upgrading. (Officially anyway).
The SE update service supports these models currently:
P900 ; Z600 ; T630 ; K700i; S700i; F500i ; P910i ; V800 ; K300i; K750i; W800i; J300i; V600i ; Z520i
If you don't have one of those then it either won't work, or there's currently no updates available (e.g. W900).
And no, you can't do it via bluetooth or infrared.
