Why do alot of the games I have which worked perfectly well on my K800i which was on the Orange network worked fine
However when I send them to my friend's K800i which is locked on 3 - they no longer work fine. Now they only appear in a small side of the screen.
What's up with 3? It's the same phone!

That's why branding sucks. It's not really good for anything. Generic is the way to go.

They wont, the K800i has a larger screen resolution.

As AngelofDeath said, most games doesn't autodetect your screen resolution but simply run in the resolution that is set in the game itself (that's why there are different versions of the same game for different phones). A few games detects it though, but most don't.
