can you use chat through bluetooth? (i know u can on a T68i on the sms function) but can it be done through blue tooth???

Actually you can also send your own recorded voice messages via bluetooth same way you attach them to MMS.

Note: each voice channel on Bluetooth supports 64kbps using CVSD Continuous Variable Slope Delta Modulation. In order to accomplish what you propose you need to set up BT on an IP scatternet.
