I am just assuming how the k800i reacts, but is there any chance that you are receiving text messages during playback?
I also suggest that you play the file on another device, such as a computer, or mp3 player and listen out for any changes in volume levels.
:Edit:
If your hearing these volume changes in the ear-piece try playing the songs through the speaker. If no change in volume has occured then your problem is the ear-piece.

Do you know what your current FW is on your w700? If not then go to the standby screen / the screen before the main menu and press :
>*
The arrows represent the direction in which you have you push your joystick, and the * is the key in the bottem left corner on your keypad. You press that also. If done correctly you should coe up with a screen showing Service at the top.
Go to:
* Service Info => Software Info
And you should get a white screen with alot of text. Tell me what the first line of writing says.
Example: R1CA021, R1CF001

Well looks as if you currently have the lastest firmware released for your model. Suggestions:
(a) wait for a future firmware update for you to install.
(b) soft reset by going to Settings => Master Reset => Reset all.
(c) take your headset to a local SE Service Center.
Good Luck!!!

Not if they are backed up on your Sim-Card!!
:Edit:
You can do this by going to Contacts => Options => Advanced => Copy to SIM.
*note*
Copy to SIM not Copy From SIM.

Your not the only person that is suffering from that problem. I currently experience this problem on my O2 Branded K700i. That also can be resolved in a future firmware update.
Btw for future reference these so called problems you are having are better know on Esato as bugs. Bugs are errors, flaws, mistakes, failures, or a fault in a program that prevents it from working correctly or produces an incorrect result. Bugs arise from mistakes and errors, made by people, in either a program's source code or its design.
Knowing these terminologies make you look understanding in the field and can lead to more help by people who can provide it to others on that level of understanding.
