Try to make a theme by Theme Creator 2.54. Choose 'FFFF' (solid white) as the title text color in navigation. It will never show up solid white on your K800 screen at all. Instead, it becomes solid black..a bug?
Second, try not to insert any image at all for Activity Menu. You'll see that the Activity Menu Tab will never show up in this case! When there is an image, all is fine. A bug?

There's also a fake preview on Theme Creator. Try not to put any image for Row Title. The preview shows black image. Look at your phone! It displays the image of your navigation Background. A bug?

Also, try to make an animated gif image for Activity Menu Highlight and Activity Menu Highlight Small. It will never be animated at all! At other parts, animation works perfectly. A bug or is it just the way it is?
Anyway, those are just minor bugs. They are fixed easily by 'doing the contrary'.

For your first question, perhaps the title color and background color are too similar? Read the "Element colours" portion of the Themes Developers Guide. Same for your last question - the parts of the menus that support animation are listed in there.

No, I'm sure about the background. I chose dark brown with purely white title text. It can't display the pure solid FFFFF white...It just shows black. But after I change the color to 99% white/ not pure white, it works normal...
