I've searched extensively but I can't seem to find any way to easily sync SE Notes with any software on Mac OS X. Does anyone know how to do this? Stickies, perhaps?

Simple answer is, you can't!
iSync doesn't support the Notes. You can read and write them with either PhoneAgent or BlueNotes but neither app will sync them. You have to manually send and recieve them via Bluetooth.
