After spending 2 hours on the phone to carphone warehouse data support, here is the info I was looking for. It's still a bit unclear what the distinction is between the different settings.

Internet - (02 WAP GPRS)
address: wap.o2.co.uk
username: o2wap
password: password
Proxy : 193.113.200.195
port : 8080

Email - (o2 mobile web)
address : mobile.o2.co.uk
username : o2web
password : password
proxy : 193.113.200.195
port : 8080

This includes access to an smpt server smtp.o2.co.uk, I didn't check if it allows access to internet as well, but the wap connection above did not give me access to any email servers.

Dial-up (to use my inclusive minutes, or if gprs is not availible)
number : +44 7712927927
user : o2wap
pass : password

The later was difficult, it seems that the latest 3G sim cards are by default not enabled for CSD or GSM data calls. (but my old sim was, so I could prove I had the connections right) I had to be fairly explicit with support to guide them to enabling this for me, but it didn't seem to be a problem.

The reason why I ask is that I cannot access my emails via the WAP, and found your post and entered the MOBILE settings and now it works.
