What can I use to edit 3gp files? As in take them off my phone and edit them?

You can use regular movie editors, I think. But you may have to convert the 3GPP file to something else before. But after that, use Windows Movie Maker, Pinnacle, Vegas etc.
For cellphones: No idea. I don't think there are movie editors for UIQ3 yet
