I've been trying to send MMS messages to email addresses because I don't know anyone else with an MMS phone
and the messages are not arriving.
Would anyone have any ideas about this? I am using Vodafone in Ireland. My phone had an MMS profile and a WAP profile; I was originally unable to send MMS messages because I was using the MMS profile, but when I send using the WAP profile it will send fine to another MMS phone. (At the moment I can only send them to myself to test

Sounds like your "MMS" setting is wrong if you have to use your "WAP" setting to send MMS messages. Saying that, your WAP Profile settings for both WAP and MMS are probably the same (as they are for Vodafone U.K. but I'd check with Customer Care).
You should be able to send to email through MMS, especially if you can use those same settings to send MMS messages! I'd hassle Customer Care and get them to sort it out, that's what they're there for! Good luck!
