Now I want to ask if you can keep the screen on (e.g. not shutting the screen off so you have to press a button to make it visable again). I've been reading the info which came with the phone, but found nothing related to this.

Nothing, I just like being lazy. It's not a huge problem if it can't be done, but the k800i screen dims faster then my previous phones. I guess I'll have to get used to it.
