When my K810i is not being used after around 10 seconds the screen goes blank and the only way of turning the screen back on is pressing one of the keys. Is there anyway to stop this from happening?

I doubt it, but this IS useful, you know. If the screen stayed on the whole time, it would eat-up the battery... in no-time.
Try turning off the screensaver, though.

it's not 10 seconds. i think it's 20 seconds, then the screen saver comes up and then the screen goes off. this is for saving battery life. so i dont think you cant stop this.

My backlight stays on for approx 27 secs (including keypad lock time). My screensaver is turned off.

I think mine turns off a little after 10sec. I've not been able to find a setting for it, but there really should be.
