Hello,
Can anyone tell me how to change the application shortcuts on the
activity menu standby application on the homescreen?
I have 2 shortcuts for TomTom and can't delete one of them, I also uninstalled some games and the shortcuts stayed in the shorcuts list but the icons were greyed out?

You can't delete the icons, all you can do is replace them with another application or function (from the 'more' menu, choose 'replace'). As for the greyed-out shortcuts, that is what they are like when you first get the phone. You just choose another app as per above. Pressing the small triangle icon will minimise these icons to one line anyway - put your favourites and most used shortcuts on this row.
